Turkey Quinoa and Spinach Muffins with Oven Roasted Veggies

What is a good meal after a 50 minute virtual cycling class through South Africa? Turkey Quinoa and Spinach muffins with an array of veggies!

 

                                                                Ingredient List:                                                                  
1.5 lbs ground lean turkey
1/4 cup quinoa
1/2 bunch asparagus
1 zucchini
1 handful of cherry tomatoes
2 egg whites
1 large sweet potato
1 C chopped spinach
1/3 chopped onion
1 Tbs extra virgin olive oil
4 cloves minced garlic
Salt
Pepper
Dry Thyme
Cinnamon
Turmeric

Dipping Sauce:
1/4 cup plain non fat Greek yogurt
1 Tbs hot sauce
1/2 Tbs spicy mustard

 Rinse the quinoa in cold water and then add to 2/3 C of water. Bring water and quinoa to a boil, then turn it down and let it simmer for 15 mins until the germ of the seed in showing, that is how you know it is done.
 
Wash and cut all the veggies into equal sizes. Chop just the ends of the base off of the asparagus. I like to put the veggies in a bag to add the olive oil, that way I don't have to add very much but I can be assured that all of the veggies are coated. Yes, olive oil is a healthy fat and it's a good part of a healthy diet, but we can always have too much of a good thing. When I try to drizzle I always add way to much. 
When I do sweet potato fries I use an egg white instead of oil, it tends to make them a little crispier on the outside but still fluffy on the inside. So I add my tablespoon of oil to the bag of veggies, and an egg white to the bag of potato slices. I twist the top of each bag shut and shake it like crazy, getting everything inside well coated. Then I just dump it right onto the pan, spread them out evenly and season. 

I used cinnamon and turmeric for the potatoes, making them a little sweet.
Then for the veggies I used salt, pepper, and dried thyme. 
 

Preheat the oven to 375 and put the potatoes in as it preheats, since these needs more cook time than the rest. In a large bowl mix together Turkey, Quinoa, Chopped Spinach, 1/3 Chopped Onion, Salt, Pepper, Dried Thyme, 1 Egg White (or whole egg if you want), 4 cloves minced garlic, and mix it all together by hand until evenly mixed. Form into balls and place in muffin tin. 

Throw the Turkey Muffins and Veggie pan into the oven with the Potatoes and cook for 30 minutes. 

If you are like me and you need a dipping sauce for everything, I mixed together so spicy mustard, hot sauce, and Greek Yogurt. Drizzling some heated pasta sauce over the turkey would be super yummy as well.
