Spaghetti Squash and Turkey Sausage Lasagna

 My mom went to Hawaii for a week to stay with her Cousin and I knew that when she got home, due to jet lag she would be dang tired. I decided that I would invite her and my dad over to our place for dinner. Pajamas, and slippers required! That way she wouldn't have to worry about cooking and cleaning after such a long plane ride. Plus I missed her! My dad is a picky eater and doesn't enjoy many healthy foods. He's a chicken wings and beer kinda guy. So, I know he likes spaghetti squash, sausage, and cheese ( who doesn't?) and I also knew my mom had been wanting to try this dish I made once before. Not to mention this is one of my personal favorites, ( and Justin's ) that I have made so far.

Spaghetti Squash Lasagna:
1 large or 2 small spaghetti squashes
Jenny O Sweet Italian Turkey Sausage (or meat of your choice)
1/2 White onion
1-2 cups pasta sauce
1 cup low fat part skim ricotta cheese
1-2 cups low fat part skim mozzarella cheese 
1 cup shredded Parmesan cheese

I use sweet Italian turkey sausage for this, this sweetness of the meat goes really well with the spaghetti squash. The sausage comes in a casing, so I take the casing off and cook it like ground turkey with half of a white onion. Cook it until it's browned and put in the fridge.
My new favorite way to cook the spaghetti squash is whole. I used to slice it in half but this way is so much easier if you are a weakling like me and have a hard time cutting it.
Stab it a few times with a knife, just like you would a potato before you bake it. This way it won't explode in your oven! Preheat the oven to 425 and then bake the squash(es) for 45 minutes or until the skin is easy to pierce with a fork or knife. 
 Let the squashes cool a little before cutting them, they will be SUPER hot. Put a little bit of pasta sauce at the bottom of the casserole dish. Then layer squash, ricotta cheese, mozzarella cheese, and cooked sausage.
Then add another layer of sauce, ricotta, squash, sauce, mozzerella cheese, and top with Parmesan cheese.  ( Hey, I didn't say this was going to be the HEALTHIEST of meals! Lots of cheese!) Mmmm.
 Preheat the oven to 375 and then bake for 30-40 minutes. When the cheese starts to brown and the sauce is bubbling, you know it's done.
