Salsa Chicken and Quinoa

Are you wanting a recipe that even your husband can throw in the slow cooker for you? Well this is it, after we dished this up yesterday Justin said to me, "I could make this!" and he is right. It is SO simple. 

Items needed for 3 servings:
6 Frozen Chicken Tenderloins (or 3 breasts)
1-2 cups Chunky Salsa
1 tsp Cajun Seasoning
1/8 cup Parmesan Cheese
1 cup uncooked Quinoa
2 tsp Minced Garlic

All you do is throw the chicken (still frozen) into the crock pot
dash some Cajun seasoning on it
top with salsa (make sure all the chicken is covered)
Grate some Parmesan cheese on top

Cook on low for 6-8 hours

Then 20 mins before the chicken is done, rinse 1 cup of quinoa in cold water
Then bring 1 1/4 cups of water to boil (or a little more) and add the quinoa
Cook for about 15 minutes or until the water is mostly gone and the germ of the seed is showing.
Mix in a little garlic.

There you have it, quinoa topped with salsa chicken. We had a spinach salad on the side to add our greens.
