Turkey Quinoa Meatloaf Muffins

Okay so I have been trying out this No Sugar Until Christmas Eve Challange...and if you know me at all this is complete insanity! I am a real sugar addict!! So much so that after 7 days I had to make my food look like cupcakes with frosting. I know, I have a problem. These turkey meatloaf muffins are so easy and healthy and of course they are so cute! It's perfect for when you are in a hurry... cook them and you can snack on them for a couple days, lunch to go! Perfect for a busy college student like myself.  Plus, I was finally able to put my muffin tin to use, since I don't bake.
You can use Turkey, or Chicken. I used turkey because that is what I had on hand.  Also I had to add one of my favorite foods, quinoa. It is indeed a super grain! But some use bread crumbs, crackers or oatmeal. Okay I'm done lecturing on how to make meatloaf when it is one of the easiest things to make, and this is my first time making it! Yes, I am guilty of having that hatred for meatloaf as a lot of us did when we were young. Today I can say that I do LOVE my mama's meatloaf.
I've got those grown up taste buds now...
Meatloaf muffins:
1 lb ground turkey, or chicken
1/2 cup cooked quinoa
2 egg whites
1/4 cup quick oats
1/2 tsp chili powder
1 tsp ground black pepper
Any herbs you have on hand, I just used a dash of italian seasoning
4 cloves minced garlic
1/2 white onion ( I used onion powder since I didn't have an onion on hand)
1 small shredded carrot
Mashed Topping:
1 Sweet potato
1 yellow squash
dash of salt
dash of tumeric
Cook quinoa as directed
Preheat oven to 375
Spray a muffin tin with a generous amount of non stick spray
Mix all the meatloaf ingredients in a bowl with your hands until fully mixed
Form little balls with the muffin batter, yep batter and place evenly in the muffin tin
Put in oven at 375 for 30 minutes, or until done.
Peel and chop the potato and squash, boil until they are easily pierced with a fork. Drain all of the water out and mash. The squash adds extra water.
This will make 6 muffin.
Double everything to make 12.
I recommend the bigger serving cause you will probably eat all 6 by yourself! :)
