Chicken Quinoa Soup in the slow-cooker

Sinus infections seem to plague me every time things get stressful. Finals week=Stress! I hate to take antibiotics unless necessary, and though I felt like death, it was not a must. I do enjoy drinking my tea with honey, and using a warm compress. Nothing opens up the sinus like some hot steam! But just the tea and steam (not to mention the large amounts of decongestants) weren't doing the trick.

We all enjoy warm soups when we don't feel well. I had a can of Progresso Chicken Noodle in the cupboard, but it didn't seem to be calling my name. I wanted something a little more hardy, so my boyfriend could enjoy it as well.
BUT I didn't want to put a lot of effort into it. I wanted to go to school and come home to dinner. I sure do love the slow-cooker for that reason right there! This recipe did the trick, I made this last night and I actually feel half way better today. It must be Magic ;) 

Chicken Quinoa Soup:

Ingredients:

1 cup uncooked rised quinoa
2 cups low sodium chicken broth
2.5 cups of water
5 garlic cloves minced
4 large carrots skinned and chopped  
1 cup frozen peas
2 frozen chicken breasts or 6 chicken tenderloins 
Seasonings: Dash to your liking
-Tumeric
-Pepper
-Italian Blend

Put everything except peas in the slow-cooker, stir, set to low and let cook 6-7 hours.
Steam peas and add before serving. You can add them to the cooker along with everything else, they will just be a little mushy and I prefer they still have a bite. 
Shred chicken with a fork, stir well, and serve!
